New food business, Happy Cow, now open

One of the newest businesses to open is the Happy Cow - a restaurant in New Columbia adjacent to the Magic Mart. They had a soft opening last Wednesday. Pictured on their first day are Pinewood Center developer and former County Judge Executive Mike Stephens and Columbia Mayor Pam Hoots, at left, with owners Erick Montoya and Destiny Carter and children Avianah and Mia Montoya.
