Epicurean Kentuckian: Fiesta Burrito, better the deeper you dig

2018-08-05 - Fiesta Mexico, 819 Jamestown St., Columbia KY. - Photo CM Ad photo.

(Ad Photo) - The current Saturday Special at Fiesta Mexico, Burrito Fiesta - Large flour tortilla field with seasoned ground beef or tender chicken, with Mexican rice and beans, lettuce, tomato and sour cream, $6.75 - is enough food to fuel a construction worker. And for many mature adults, it's too much for one meal. This one recently provided a viewside window meal & a Sunday Breakfast. What's really great about the place is that, while it appears to be just a delicious Mexican Salad Dish, the deeper one digs, the better it gets. The ground beef is perfectly seasoned for the native palate - though mild for Pepperheads - but authentic flavors can be goosed up with an array of condiments provided tableside with no need to plead with the wait staff to provide it. Take out boxes are provided at any stage of the meal for those who need to make a second meal from the generous servings for budget and/or dietary reasons. - EW
