Epicurean Kentuckian: French Toast and Grilled Chicken Breakfast 2017-08-07 - Columbia, KY - Photo by Linda Waggener, ColumbiaMagazine.com(c). With all the cooking show hype about spicy hot chicken and chicken & waffles, this dish seemed a natural: grilled Chicken and French Toast with maple syrup and a few chipped fresh-from-FM2 Jalapeno peppers. It works for us. Next time we may try chicken thigh instead of chicken breast - it's juicer - and adding chipped Granny Smith apples and chipped sweet onions and celery, and a bit more cinnamon and more melted butter. Of course, it's not a new invention, Chicken and French Toast recipes are not rare. Historically, French Toast was a minor specialty when J.D. Harper ran the Circle R and almost any breakfast request would be accommodated by Peggy & Vonda Brockman. When I hear the words "French Toast," I can't help but remember that it was a favorite at the CR preferred by the sophisticated Arizona cowboy, Larry Legg, who knew when Grover Gilpin was present that Grover would sneer at his choice, calling it "Fried Bread," and so shall I, having the dish as Chicken, Fried Bread, and Syrup. - EW Permalink | Comments?
