It may have been a different method of cooking, it may have been a different source and size, but the Fordhook Lima beans served this week at Betty's OK Country Cooking were the closest to the taste I remember of the ones J.D. Harper used to serve - remember when the Peggy Brockman would bring those Fresh Frozen Fordhook Limas as listed on the daily specials there? The lima's texture then and above was soft and, after butter was slathered over them, good enough for dessert. This photo showcases one of Betty's Famous Blue Plate specials. - EW
