A bowl of pinto beans at Betty's OKCC is a treat, and a reminder of a foundation dish which made the restaurant nationally famous. This is only one variation of what comes with the self serve dish: Pintos with Betty's cold bar sweet red relish, onions as sweet as apples, and a square of cornbread which tastes as good as it looks, served, fittingly enough, on table spreads with a patriotic theme. For many, this is the National Food of Adair County.. Eating it was a reminder of one complaint the staff likely wants as often as possible. The critique came from a great Adair County wordsmith and author, Christopher Rowe, who wonder at the name, "OK."
