Looking for an easy, fast way to cook Adair County eggplant, we tried this method. Cutting the eggplant into quarter inch thick slices, lengthwise, we browned them in olive oil on each side then used the eggplant instead of bread to make a grilled cheese sandwich. The sandwich was lightly seasoned with garlic, salt and pepper. Then garnished with fresh locally grown tomatoes - these are Margies - and chopped onion, celery, and cilantro and brought-on celery. Pretty good, but found out later there are sophisticated versions of the dish which read as though they would be better. Still, we were able to pretend the eggplant was a meat substitute. - EW
