Epicurean Kentuckian: Pad Thai

2013-03-03 - EK Kitchen, Shelby Co., KY - Photo by Pen.
There are over a dozen ingredients
and it's a complicated preparation, but well worth it, especially on a bone-chilling winter day. According to Wikipedia, the dish has been listed at number 5 on the World's 50 most delicious foods poll compiled by CNN in 2011. See: Wikipedia: Pad Thai. This dish was made from a second-hand dish, with some Shelby County market dictated and family preference variations, but was declared a favorite.

Happy Tails: Happy pictures from Sugarfoot Farm Rescue

2013-03-03 - Sugarfoot Farm Rescue, 860 Sparksville Road, Columbia, KY - Photo by Peg Schaeffer.
Life at Sugarfoot Rescue Farm is full of happy moments, coming and going,m as when, 1) Sarah Keltner left photo, was getting ready to leave with her newly adopted puppy, Amelia, a Beagle/Basset mix, whose Mom and Dad were abandoned at the farm in November 2012. Amelia is the subject of today's Happy Tail, accessed by clicking Readmore with this collage. 2) Even when a dog is found and brought to us, it's a time for last minute leavings, as in the center photo when Renee Hobbs left Forest, a stray dog she found, with us. 3) It's always a pleasure to see youngsters at Sugarfoot Farm Rescue, as in the right hand photo when Bella and Elizabeth, granddaughters of Mary Porter, were petting Sugar, the Sugarfoot Farm Rescue's Good Will Ambassador. -Peg Schaeffer

Epicurean Kentuckian: Chili Cheese Tots

2013-03-03 - Photo by Pen. Tater tots are not just for Study Hall snacking. They also make an excellent base for chili and melted cheese. These have been run through the garden, with diced tomatoes, onions, and jalapeno peppers.

Life in the Holler: A gentle welcome winter scene

2013-03-03 - The Holler, Old Clearsprings Road, Ozark, KY - Photo by Shamarie Claiborne. Sometimes we get just the right amount of snow in the Holler as we did yesterday morning, March 1, 2013. It was like a dusting, just enough to accent our creek, which, well behaved today, gets down right rambunctious when spring downpours come - it's bipolar, you see. - Shamarie Claiborne
