Joe Sparks is building endowed scholarship at CU

2014-02-24 - Campbellsville, KY - Photo by Linda Waggener, CU.
Joe Sparks is building an endowed scholarship at Campbellsville University, started in 2012 in the names of his sister Gayle, their late brother Willard, and Joe, who all graduated in the same year. He visited the campus recently with Paula Smith, CU alumni director, left, and Natalie Burdette, director of annual giving, and they are pictured in front of the building that housed the School of Music in 1966 and now is the location of admissions offices. Since those days, the School of Music has grown into the brick building in the back, Gosser Fine Arts. - Linda Waggener

Cycling high on Adair County School Campus Hilltop

2014-02-24 - Booster Drive at Indian Drive, Columbia, KY - Photo by Pen.
Adair County School District's Hilltop Campus
was the scene of a major cycling event yesterday. This scene was taken during a lull in the action, and overlooks Adair County Elementary School, with a visit to Campbellsville Road and the Columbia/Adair County Water Tower in the Green River Commerce Park. It was a sunny but brisk day, great for the Criterium, the closed loop race combining a stretch of Booster Drive, Agricultural Drive, and Indian Drive.

Epicurean Kentuckian: A simple salad-as-a-meal in a snap

2014-02-24 - Shelby County, KY - Photo by Pen. The taste and satisfaction of an all-in-one meal is the main thing. Variations are endless. This one, with 3 oz of meat topping a bed of lettuce with celery, bits of sweet onion, cucumber and apple - always a great combination plus bits of sweet green and red pepper, was delicious. A partially cut cumber was available, and it always works. Besides that, it was a splendid use of leftover roast - and kept the inventory of fresh veggies and fruits moving along, and it was put together in a snap, even counting the microwave warmup of the meat. Beverage of choice? Water does just fine, but fresh brewed coffee is just right for midday pickup. In summer maybe iced tea. Works whether the goal is a fridge eat-down, a meal on a budget, or time is a factor. - EK
