A closeup of the plaque presented Rudy Higginbotham's 16 years service first to the Adair County Water District and later to the Columbia/Adair County Utilities District, including the merger years. Before merger there was an often not so healthy one and sometimes there were emotional exchanges, but Mr. Higginbotham was a cool voice who helped move the merger along.

Epicurean Kentuckian: Poor Man's Country Corner

2014-12-12 - 1100 Portland Road, Columbia, KY - Photo by Ed Waggener.
Life is leisurely in Portland, KY. But it's not as easy as it looks or Poor Man's Country Corner proprietor Herbert Janes, above, taking a well deserved break after the noon time rush, on Thursday, December 11, 2014. Janes said he bought the store, because he learned to love country stores in his travels as a heavy equipment operator. Now his world revolves around life as the proprietor just up the road from his home on Poor Man's Lane. He needed a country store to attend, too. So he bought this one from founder Garnett Baker. He's changed the interior to accommodate more diners, but the store retains its traditional feel. The food he serves is good. Yesterday his daughter, Sasha Powell prepared meatloaf, corn which tasted like it was just out of the garden, mashed potatoes and green peas, and a hoecake. And if you gave them a ten, a good part of the money would have been the tip.

The afternoon sun, especially on gray days, does some magic on the east side of Caney Fork Road, one way home to Columbia, from Haskinsville Road. Above, what I remember as once Uncle Thurman and Aunt Stella Chelf Neagle's place. (Comments or corrections welcome).

Epicurean Kentuckian: Kimchi Salad

2014-12-11 - Photo by Pen. Classic kimchi is fermented, but some of the best kimchi is meant to be eaten almost immediately, like this mixture of radishes, cucumber and spinach, with green onion, fresh ginger, and cilantro. The dressing is rice wine vinegar, sugar, and salt, with a little paprika and cayenne for color and flavor.
