Pink and red honeysuckle forms a lightly tended fence along Cody Trent Road in Metcalfe County, a secluded lane which the unwary might think goes to Sulphur Well - but it doesn't. It dead ends. Metcalfe Countians seem to do more with natural fence rows, from utilizing Eastern Red Cedar for fencing, windbreaks, and habitat for birds, than almost anywhere else. Epicurean Kentuckian: Cold Brewed Coffee 2016-05-15 - Sixth and Main Coffeehouse, Shelbyville, KY - Photo by Pen. What's so great about Cold Brewed coffee? With cold brewing, you use time instead of heat to extract all the delicious flavor from coffee. It takes 18 hours to make a batch, but the result is a wonderfully smooth, sweet beverage with rich coffee flavor, and much less acid than in traditional hot brewed coffees. The recipe is easy: put a half pound of coarse ground coffee in a filter like the Pure Joy-bag Nut Milk filter, put the filter full of coffee in a 2.25 quart pitcher, like this white plastic pitcher with red cover, and then fill with a tasty, drinkable water. We use filtered water. Store in the refrigerator for about 18 hours, then remove the filter of grounds, and discard them. You can optionally pour the cold brew through a regular coffee filter to clarify and remove any fine grounds that might have slipped through. The resulting concentrate can be diluted with water or milk to a 1-3 or 1-4 ratio and served over ice. Return the pitcher to the refrigerator and it will last for over a week.
