Looking for an easy, fast way to cook Adair County eggplant, we tried this method. Cutting the eggplant into quarter inch thick slices, lengthwise, we browned them in olive oil on each side then used the eggplant instead of bread to make a grilled cheese sandwich. The sandwich was lightly seasoned with garlic, salt and pepper. Then garnished with fresh locally grown tomatoes - these are Margies - and chopped onion, celery, and cilantro and brought-on celery. Pretty good, but found out later there are sophisticated versions of the dish which read as though they would be better. Epicurean Kentuckian: Breakfast of an icon 2016-07-21 - Quick Stop, 702 Campbellsville Road, Columbia, KY 42728 - Photo By Junior Stotts. He was Mr. Democrat in Adair County for longer than most can remember - unforgettable Grover Cleveland Gilpin, shown above, enjoying breakfast at the old Quick Stop - "The Smoke House" - in the Danny Downey Building. It was the same each morning: Six cigarettes, four cups of coffee. During his life he was often told he needed to quit smoking. "Cigarettes will kill you," he was scolded. But he reminded one that he knew that, "It just means I'll spend two years less in the nursing home than you will, " he'd retort. If cigarettes did shorten his life, it happened in his 96th year. The photo above was a special occasion. Mr. Gilpin had just been given the new white hat by Junior Stotts. His old one can be seen at right. Fittingly, he's seated below a painting of another icon, UK Wildcats symbols - a team whose reputation was embellished by a Gilpin political ally, Governor Happy Chandler. The new hat was fitting, he liked to dress in an all white suit when he served as ringmaster at the horse shows at the old Adair County Fair, and was often kidded about dressing up in his "Ice Cream Suit," which could elicit a "Keltnertown Cussin'" on occasion. - EW.
