Saute a mushroom or some protein, and some aromatics like onion, celery, garlic and ginger before adding water or broth to cook the noodles. When the noodles are cooked, throw a handful of fresh spinach into the serving bowl before pouring the broth and noodles over the top to get bright, just-cooked greens. Add a fried egg, or a hard boiled egg, or garnish with scallions, sesame seeds, kimchi, corn, radish, or whatever else is waiting in the fridge.
