May declared Prader-Willi Awareness Month

The month of May has been proclaimed as Prader-Willi Awareness Month in Columbia. Prader-Willi is a genetic disorder that occurs in one of every 15,000 births. It affects males and females, all races, and all ethnicities.

Mary Howard, at left, who works with local information and publicity for the awareness, is selling tee-shirts with funds raised going toward research for Prader-Willi.

Epicurean Kentuckian: Chilaquiles

Chilaquiles is a wonderful way to turn leftovers into a quick meal. At its most basic, the dish consists of tortilla chips in a warm tomato-based sauce. A homemade ranchero sauce is terrific, but many a hangover has been cured by warming leftover salsa in a pan and then tossing in some chips.

Some restaurants will include shredded chicken or pork in the sauce for a heartier dish, and it's great topped with cheese and an over-easy egg or two. Cilantro, avocado, and sour cream can all liven up the finished dish, and the texture can range from casserole to crunchy, depending on your ratio of chips-to-sauce.

Tommy writes, "Found this retired farm machinery near Southfork in Casey County. Not sure what its function would be, but I dubbed it as a monster because it has a long beak with eyes and teeth. A drum of WD40 could bring this monster back to life."
