Chilaquiles is a wonderful way to turn leftovers into a quick meal. At its most basic, the dish consists of tortilla chips in a warm tomato-based sauce. A homemade ranchero sauce is terrific, but many a hangover has been cured by warming leftover salsa in a pan and then tossing in some chips.
Some restaurants will include shredded chicken or pork in the sauce for a heartier dish, and it's great topped with cheese and an over-easy egg or two. Cilantro, avocado, and sour cream can all liven up the finished dish, and the texture can range from casserole to crunchy, depending on your ratio of chips-to-sauce. Comments | Permalink
