Those attending the Adair Genealogy presentation Saturday got to sample a taste of the six-layer Apple Stack Cake made from historic recipe collections by presenter Mary Anne Loy. It was not only visually beautiful, the taste was sweet and spicy. The recipe calls for the thin layers to be cooked in black iron skillets, with dried apples between the stacked layers. She said she also called it a winter cake since it used dried apples. The recipe includes sorghum which was an early sweetener. Years ago apples in season were dried in the sun so they'd be available in the winter for this cake and for fried apple pies. Comments | Permalink
